Marshmallow Ice Cream
makes one gallonIngredients
Directions
Make the base
Combine one pint sweet cream, a quart milk, and two pounds marshmallows in a double boiler.
Reserve 12 marshmallows and dissolve the remainder in the milk, stirring constantly until quite thick.
Let the mixture cool.
Place the cooled mixture in the freezer.
Finish and freeze
When cold, add cream sweetened to taste, a teaspoon of orange flower water, and the 12 reserved marshmallows cut into small pieces.
This makes one gallon.

What each ingredient does
- Marshmallows
- Melt into the milk and cream to add body, sweetness and a smooth, stabilised texture.
- Sweet cream
- Adds richness and fat, giving the ice cream a creamy mouthfeel.
- Milk (in the method)
- Thins the melted marshmallow mixture and adds dairy solids for a softer, creamy base.
- Orange flower water
- Adds a delicate floral aroma that flavours the finished ice cream.
The step that matters
Cool the base completely before adding the cream and fruit. Adding cream or flavouring to a mixture that is still warm can thin it and melt the cream, and the marshmallow pieces will not stay firm. Cooling it fully first keeps the texture smooth and the pieces intact.
