Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the muffin's shape as it bakes.
Eggs
Add structure and richness, helping the batter set firm in the oven.
Cream
Adds moisture and richness, giving a tender crumb.
Butter
Adds fat, which tenderizes the crumb and adds flavor.
Soda
Reacts with the acid in sour cream to release gas that helps the muffins rise.
Cream of tartar
Acts as an acid that reacts with the soda to release gas for rising.

The step that matters

Add the cream of tartar just before baking. Cream of tartar and soda start releasing gas as soon as they meet liquid. If the batter waits, the gas escapes before the heat can set the structure, so the muffins rise less and turn out denser.
