Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the dish.
Butter
Enriches the sauce and carries flavor when melted with the flour.
Flour
Thickens the cream into a smooth sauce that holds the filling together.
Cream
Forms the rich, smooth sauce that is brought to a boil and thickened.
Mushrooms
Add earthy flavor and a soft texture to the creamed filling.

The step that matters

Stirring the sauce as it boils. Flour thickens cream only when it is stirred constantly while heating; otherwise it can clump and leave the sauce lumpy and uneven.

Swap the white pepper

How well each one fits the dish's main ingredients (butter, cream, mushroom, flour):

  1. Nutmegfits better
  2. Capersfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against butter, cream, mushroom, flour. Candidates are from the same food group and used in at least 100 recipes.
