What each ingredient does

Eggs
Set into a firm custard as they cook, giving the timbale its structure.
Milk
Adds liquid that keeps the custard soft and tender as it sets.
Grated cheese
Adds savoury flavour and a little richness to the custard.

The step that matters

Bake until the eggs just look firm. Egg proteins set as they heat, but overcooking tightens them further and squeezes out water, leaving the custard rubbery and grainy. Remove the timbales once they are just firm, since residual heat finishes the set.
