Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Fat that carries flavour and forms the base of the flour roux.
Flour
Starch thickens the butter and boiling water into a smooth sauce.
Eggs
Yolks thicken the sauce gently as they heat and add richness.
Lemon juice
Adds acidity that brightens the rich sauce.

The step that matters

Adding the beaten yolks. Egg yolks can curdle or scramble if added to a very hot liquid all at once. Taking the pan off the fire first lets the yolks thicken the sauce gently and evenly.

Swap the lemon

How well each one fits the dish's main ingredients (butter, egg, sauce, flour, pepper):

  1. Lemonthe original
  2. Raisinfits about as well
  3. Avocadofits less well
  4. Limefits less well

Fit is the average pairing score against butter, egg, sauce, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
