Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Horse-radish
Provides the sharp, pungent heat that defines the sauce.
Cream
Adds richness and a smooth, creamy body that softens the sharpness.
Sugar
Balances the sharpness of the horseradish and vinegar with sweetness.
Vinegar (in the method)
Adds acidity that brightens the flavour and cuts the richness of the cream.

The step that matters

Do not allow it to boil or it will curdle.. Cream contains milk proteins that tighten and separate when overheated. Gentle warming in a water bath keeps the sauce smooth and emulsified.

Swap the radish

How well each one fits the dish's main ingredients (sugar, pepper, horse, cream):

  1. Mustardfits about as well
  2. Capsicumfits about as well
  3. Radishthe original
  4. Beetrootfits less well

Fit is the average pairing score against sugar, pepper, horse, cream. Candidates are from the same food group and used in at least 100 recipes.
