Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provides the bulk and body of the sauce, with a sweet-tart base.
Onions
Builds savory depth and body as they soften during boiling.
Peppers
Adds pungency and heat that defines the sauce's character.
Vinegar
Adds sharp acidity that brightens flavor and helps preserve the sauce.
Sugar
Balances the sharpness of the vinegar and adds sweetness.
Cinnamon
Contributes warm, aromatic spice notes.

The step that matters

Seal while hot.. Filling containers while the sauce is still hot helps drive out air, and as it cools the contents contract to create a seal. Sealing after the sauce has cooled can leave the seal weaker.
