Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the drink and give it a rich, custard-like body.
Rich milk
Provides the liquid base and creamy richness that carries the other flavors.
Brandy
Its alcohol gradually cooks the egg yolks and adds warmth and aroma.
Old whiskey
Adds depth of flavor and aroma to the drink.
White sugar (in the method)
Sweetens the mixture and balances the alcohol.

The step that matters

Pour in the brandy gradually. Adding the alcohol slowly while stirring lets the yolks warm gently, reducing the risk of curdling. Adding it all at once can leave the eggs grainy.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, brandy):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Clovefits less well
  4. Allspicefits less well

Fit is the average pairing score against milk, egg, brandy. Candidates are from the same food group and used in at least 100 recipes.
