To Make Coffee with Milk
Ingredients
Directions
Prepare the coffee
Take three-quarters of a mill of ground coffee, dampen it with white of egg, and add cold water enough to cover it.
Add one teacupful of boiling water and set it to boil for two minutes.
Add the milk
Pour the one pint of cold fresh milk over the mixture, let it boil twelve minutes, and then stand five minutes to settle.

What each ingredient does
- Ground coffee (in the method)
- Provides the main flavour and aroma of the drink.
- White of egg (in the method)
- Binds the fine grounds so they can be settled out of the liquid.
- Boiling water
- Extracts flavour from the grounds and brings the mixture to a hot brewing temperature.
- Cold fresh milk
- Adds body, richness and a mellow sweetness that softens the coffee's bitterness.
The step that matters
Boiling the milk. Milk can scorch on the bottom of the pan and boil over quickly, so it needs watching. Letting it stand afterwards lets the grounds and egg white settle, which keeps the drink clear.
