Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mellow peaches
Provide the main fruit flavour and body of the sorbetto.
Sugar
Sweetens the mix and lowers its freezing point so it stays scoopable.
Orange juice
Adds acidity and citrus aroma that brighten the fruit flavour.
Egg white
Whipped into a meringue to lighten the texture of the frozen dessert.

The step that matters

Turning the mixture while it freezes. Turning slowly and packing the mix keeps ice crystals small and the texture smooth. Freezing it still and unstirred produces a coarse, icy result.

Swap the orange

How well each one fits the dish's main ingredients (peach, sugar, egg):

  1. Vanillafits better
  2. Apricotfits better
  3. Raspberryfits better
  4. Orangethe original

Fit is the average pairing score against peach, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
