Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Thickens the soup as it cooks and gives it body.
Cream
Adds richness and a smooth, velvety texture.
Egg yolk
Enriches and thickens the soup when stirred in.
Butter
Cooks the onion gently and adds richness.

The step that matters

Adding the egg yolk. Egg yolk thickens when heated, so it can curdle if the soup is boiling. Add it off the heat or with the soup just below a simmer, stirring constantly, to keep it smooth.
