Cut six hard-boiled eggs in halves cross-wise. Remove yolks and mash them with a fork. Add a pinch of mustard, a little salt and pepper and moisten with oil or butter, make into balls and refill whites. Arrange on lettuce and serve with either oil or cooked dressing. Mrs. E. W. Matthews.
