Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the dressing and thicken it when cooked over hot water.
Vinegar
Adds acidity that gives the dressing its tang.
Melted butter
Adds fat for a rich, smooth dressing.
Cream
Added once cold to lighten the dressing's texture.

The step that matters

Cooking the dressing over hot water. Eggs thicken when heated gently, but too much heat can scramble them. Cooking slowly over hot water keeps the dressing smooth and creamy.
