Hot Cross Buns

Ingredients

Directions

Make the sponge

  1. Combine three cups of sweet milk and one cup of yeast, adding enough flour to make a stiff batter, and set as a sponge overnight.

Mix and knead

  1. In the morning, add one cup of sugar, one-half cup melted butter, one-half cup nutmeg, and a spoonful of salt, then add enough flour to roll out like biscuits.

  2. Knead well and set to rise for five hours.

Shape and bake

  1. Roll dough to a thickness of half an inch.

  2. Cut into round cakes and place in a pan.

  3. When the cakes have risen for half an hour, make a cross on each one and bake immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast
Produces gas that lifts the dough, giving the buns their airy rise.
Sugar
Feeds the yeast and adds sweetness and gentle browning.
Melted butter
Adds fat that softens the crumb and enriches the flavor.
Sweet milk
Provides liquid that hydrates the flour and keeps the dough tender.
Nutmeg
Contributes warm, aromatic spice flavor.

The step that matters

Knead well and set to rise for five hours. Yeast gas must stretch a well-developed gluten network to lift the dough. Kneading builds that network, and a full rise gives the buns lightness; underproofed dough bakes dense.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against milk, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
