Scotch Short-bread

Ingredients

Directions

Make the dough

  1. Rub together into a stiff, short paste: two pounds flour, one pound butter and six ounces loaf sugar.

  2. Make it into square cakes, about half an inch thick, and press them all along the edge at the top.

Decorate and bake

  1. Over the whole surface of the cakes, sprinkle some white comfits.

  2. Put the cakes on tins so that they touch each other at their edges, and bake in a slow oven.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the paste, so the cakes hold their shape when baked.
Butter
Adds fat that makes the paste short and tender, rather than tough.
Loaf sugar (in the method)
Adds sweetness and helps give the baked shortbread a crisp texture.

The step that matters

Bake in a slow oven. A low, gentle heat dries and sets the cakes through without browning them. A hot oven would colour the outside before the centre is cooked, giving a darker, less crisp shortbread.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
