Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the frosting and, as the syrup cools, gives it body and structure.
Eggs
Whites trap air when beaten, giving the frosting a light, airy texture.
Sweet almonds
Add nutty flavor and a fine, slightly crunchy texture to the frosting.

The step that matters

Cook the sugar until ropy. Syrup cooked to the ropy stage has the right concentration to set into a smooth frosting when beaten. Undercooked syrup stays runny and will not thicken, while overcooked syrup turns stiff and grainy as it cools.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
