Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sugar
Sweetens the batter and, boiled with water, forms the filling syrup.
Melted butter
Adds fat and richness, giving the cake a tender crumb.
Flour
Provides the structure that holds the cake together as it bakes.
Eggs
Beaten whites trap air and help set the cake's structure as it bakes.
Baking powder
Releases gas when heated, helping the cake rise.
Sweet milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Remove the sugar from heat and stir in the egg and raisins.. Sugar syrup that is still very hot can cook the beaten egg and make it grainy or lumpy. Taking the pan off the heat first lets the egg blend smoothly and gently set into the filling.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, butter, milk, flour, egg):

  1. Vanillafits about as well
  2. Raisinthe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, butter, milk, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
