Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Dissolves in the hot water to make a syrup that sweetens the drink.
Claret
Provides the wine base and its flavour to the drink.
Soda water
Adds carbonation, giving the cup a light, lively fizz.
Lemon juice
Adds acidity that brightens the sweetness of the wine and sugar.

The step that matters

Letting the syrup cool before mixing. Adding hot syrup to the wine and soda water would drive off carbonation and warm the drink, so the syrup should be cold before it is strained and mixed in.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits about as well
  4. Nutmegthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
