What each ingredient does

Beef tongue
Forms the main body of the salad as tender, meaty cubes.
Hard-boiled eggs
Add soft, firm texture and richness to the cubed salad.
Mayonnaise dressing
Adds moisture and fat so the cubed ingredients bind together.
Lemon juice
Adds acidity that brightens the flavour of the rich tongue and dressing.

The step that matters

Cool the tongue before cutting it into cubes. Warm meat is soft and crumbles when cut, so letting the tongue cool fully lets it hold clean cubes that keep their shape in the salad.

Swap the onion

How well each one fits the dish's main ingredients (celery, pepper, cream, sugar, milk, egg, pineapple):

  1. Capsicumfits better
