Directions

Boil 3 lbs. of halibut, remove the bones and then mince. Grate an onion to flavor and add salt, pepper, a rich cream sauce, and well-beaten whites of 3 eggs. Put into a fish mold and set in a pan of hot water in the oven for half an hour. Turn out on a platter and make eyes and fins of hard-boiled egg yolks. Serve with lobster or crab sauce made of a rich cream sauce with lobster or crab added.

BOILED SALMON. Wrap fish in thin muslin and boil in salted water about 15 minutes to the pound. Serve with sauce made as fol- lows: Rub 1 tbs. of butter and 1 of flour to cream in a bowl. Add boiling hot water and stir constantly to avoid lumps. Do not boil. Add the juice of half a lemon just before serving. Mrs. T. F. Quinby.
