Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Canned salmon (in the method)
Forms the main body and flavor of the loaf.
Eggs
Bind the loaf and set as it cooks, holding its shape.
Bread or cracker crumbs (in the method)
Absorb moisture and give the loaf a tender, sliceable texture.
Butter (in the method)
Adds richness and moisture to both the loaf and the sauce.
Flour (in the method)
Thickens the sauce so it coats the loaf.
Lemon juice
Adds acidity that brightens the rich sauce.

The step that matters

Thickening the sauce. Flour needs to cook fully with the liquid to lose its raw taste and thicken evenly. The egg yolks thicken gently with heat but can curdle or scramble if the sauce boils hard, so keep the heat moderate and stir constantly.
