The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chopped beef (in the method)
Forms the main body of the loaf and gives it its meaty flavor.
Eggs
Bind the mixture so the loaf holds its shape when cooked.
Bread crumbs
Absorb liquid and soften the texture, keeping the loaf moist.
Milk (in the method)
Adds moisture, keeping the loaf tender as it cooks.
Butter (in the method)
Adds fat that helps the loaf brown in the pan.
Onion
Adds aroma and mild sweetness as it cooks with the meat.

The step that matters

Browning the loaf in butter. Browning in hot fat triggers the Maillard reaction, which builds color and savory flavor on the surface. A pale, unbrowned loaf will taste flatter, so the outside needs enough time to brown before boiling.

Swap the onion

How well each one fits the dish's main ingredients (bread, egg):

  1. Asparagusfits better
  2. Leekfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against bread, egg. Candidates are from the same food group and used in at least 100 recipes.
