What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Milk
Adds creaminess and a mild, rich body to the broth.
Soda
Neutralises the tomato acid, which makes the milk less likely to curdle, and causes foaming.
Butter
Adds fat for richness and a smoother mouthfeel.
Soda crackers
Soften in the liquid and give the soup some body and starch.

The step that matters

Add the milk after the foaming stops. Baking soda neutralises the acid in the tomatoes and foams as it does so. Once the foaming settles, the mixture is much less acidic, so the milk is less likely to curdle when added.

Swap the tomato

How well each one fits the dish's main ingredients (milk, butter, pepper):

  1. Potatofits better
  2. Capsicumfits better
  3. Tomatothe original
  4. Asparagusfits about as well

Fit is the average pairing score against milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
