What each ingredient does

Eggs
Yolks enrich and bind the batter, while beaten whites add lift and a light, open crumb.
Butter
Creaming with sugar traps air and adds richness and a tender texture.
Flour
Provides the structure that holds the heavy fruit and batter together as it bakes.
Sugar
Creamed with butter for sweetness and to help give the cake a tender crumb.
Raisins
Add chewy sweetness and moisture throughout the cake.

The step that matters

Dredging the fruit in flour before adding it. Flour-coated fruit is less likely to sink to the bottom of the batter, so the raisins and citron stay spread through the cake as it bakes.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, butter, flour, raisin, cream, egg):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Capersfits less well
  4. Jalapenofits less well

Fit is the average pairing score against sugar, butter, flour, raisin, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
