Why it works: Beans and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 4,733 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ham, Salt Pork and Bacon

Ingredients

Directions

Prepare the ham and pork

  1. Cook ham in any way in which fresh pork is cooked.

  2. Cut ham in slices 1/4 inch thick or thinner and broil or fry lightly in a pan.

  3. If ham is too salty, soak it a half hour in warm water.

  4. If a large ham is very salt, soak it in cold water for 24 hours.

  5. Put the ham into cold water, bring slowly to a boil, and simmer half a day if the ham is of good size.

  6. A ham may also be baked.

  7. To broil salt pork, slice it thin and freshen it by laying it in cold water overnight or a half hour in warm water.

  8. Broil salt pork till transparent and a delicate brown in color.

  9. Broil bacon without freshening.

  10. Fry salt pork only till transparent, saving the fat; salt pork must be first freshened.

  11. Put pork into cold water, bring slowly to a boil, and simmer from a half to 2 hours, according to size of piece.

Make ham cakes and croquettes

  1. For ham cakes, mix chopped boiled ham, breadcrumbs, eggs, pepper and salt, with enough milk to make quite moist.

  2. Fry ham cakes on a griddle in small spoonfuls, turning them as pancakes.

  3. For the potato version, use mashed potatoes instead of breadcrumbs and fry as above.

  4. For croquettes, mix the ham with little or no milk and make into small balls.

  5. Roll the balls in egg and breadcrumbs, then fry in boiling fat.

Bake the dishes

  1. For ham with eggs, put either mixture into a baking dish and smooth the surface.

  2. Make little hollows in the mixture with the bowl of a spoon.

  3. Bake until hot, then break an egg into each hollow.

  4. Return to the oven until the eggs are set.

  5. For pork and beans, parboil 1 lb salt side pork and score the skin in squares.

  6. Half bury the pork in the beans and bake 2 hours, or till a nice brown.

  7. For pork and potatoes, slice a dozen potatoes thin and slice 1/2 lb fat salt pork.

  8. Layer potatoes and pork in a pudding dish, seasoning with salt and pepper (only a little salt).

  9. Bake covered for a half hour, then uncover and brown.

  10. For pork and apples, slice sour apples round in slices 1/2 inch thick without peeling.

  11. Fry the apple slices with strips of pork or bacon and serve together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the ham cakes and set the baked egg-and-ham dish.
Breadcrumbs
Absorb moisture and give the ham cakes and croquettes a crisp, browned coating.
Boiled ham
Provides the main savoury flavour and the bulk of the ham cakes and croquettes.
Salt pork
Adds fat and savoury flavour; freshening draws out excess salt before cooking.

The step that matters

Freshen salty ham or salt pork before cooking. Salt cured meat stays very salty unless soaked in water first. Soaking draws out surface salt, so the finished dish is not overly salty.

Swap the beans

How well each one fits the dish's main ingredients (vinegar, ham, pork, egg, pepper):

  1. Beansthe original
  2. Peasfits about as well
  3. Sesamefits about as well
  4. Black-eyed peafits about as well

Fit is the average pairing score against vinegar, ham, pork, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
