What each ingredient does

Indian meal
Provides the bulk and coarse, crumbly texture of the loaf.
Sour milk
Its acidity reacts with the soda to produce gas that lifts the loaf.
Soda
Reacts with the acid in the sour milk to leaven the bread.
Butter
Adds fat, softening the crumb and adding richness.
Sweet milk
Adds moisture and softness to the batter.
Wheat flour
Adds gluten that gives the loaf some structure and holds it together.
