Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Whites beaten separately and folded in to lighten the batter and add structure as it sets.
Flour
Provides the main structure that sets the cake as it bakes.
Soda
Reacts with the sour milk to produce gas that helps the cake rise.
Sour milk
Its acidity activates the soda and adds moisture and tenderness.
Raisins
Add chewy pieces and sweetness dispersed throughout the cake.

The step that matters

Add the whites of the eggs, well beaten. Beaten egg whites trap air that expands in the oven and sets the crumb. Under-beaten whites give a dense cake, while over-mixing after adding them deflates the foam and loses that lift.

Swap the raisin

How well each one fits the dish's main ingredients (butter, sugar, flour, milk, egg):

  1. Vanillafits about as well
  2. Raisinthe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, sugar, flour, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
