The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet milk
Provides moisture and liquid that hydrates the flour to form the batter and dough.
Yeast
Produces gas that makes the sponge and dough rise, giving the buns their light texture.
Sugar
Feeds the yeast and adds sweetness, and in the egg wash it helps the crust brown.
Butter (in the method)
Adds fat that softens the crumb and gives the buns a richer flavour.

The step that matters

Knead well and set to rise for 5 hours. The dough must rise fully before shaping. Yeast gas expands the gluten network; under-proofed dough bakes dense, while over-proofed dough can collapse and lose structure.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits about as well
  4. Clovefits less well

Fit is the average pairing score against milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
