  • 1 quart oysters in a saucepan
  • 1 pint water
  • 1 quart oysters in a kettle
  • 1 quart water
  • 2 quarts milk
  • 2 tablespoons butter
  • 4 branches celery chopped
  • 2 branches chopped parsley
  • 53 oyster soup
  • 1 dozen rolled crackers
  • salt
  • cayenne
  • pepper

Directions

Put 1 quart oysters in a saucepan with their liquor and 1 pint water, 4 branches celery chopped and 2 branches chopped parsley. Add \ teaspoon salt and half as much cayenne pepper. Let boil 5 minutes. Skim the broth, add a little butter and sweet cream, strain into cups and serve. Take out the parsley and celery, and keep the oysters in a cool place for further use.

Put the liquor from 1 quart oysters in a kettle with 1 quart water, let boil and skim ; add 2 quarts milk ; when nearly at the boil put in 2 tablespoons butter, salt and pepper to taste, the oysters and 1 dozen rolled crackers. Take up as soon as it be- gins to boil.

Drain the oysters well ; put the milk on to boil with a little water to prevent scorching; when scalding hot, add butter, salt and pepper to taste; drop in the oysters, let get heated through without cooking, and serve at once.
