What each ingredient does

Rump of beef
Becomes tender through long, slow cooking as its connective tissue breaks down.
Flour
Thickens the cooking liquid into a richer sauce.
Onions
Soften and sweeten as they cook, adding depth to the sauce.
Paprika
Gives the goulash its colour and characteristic sweet, earthy flavour.
Potatoes (in the method)
Release starch as they cook, adding body to the stew.
Tomato sauce (in the method)
Adds acidity and savoury flavour that balances the richness of the beef.

The step that matters

Cover and let cook slowly for 30 minutes. Keeping the liquid at a gentle simmer rather than a hard boil lets the beef become tender without toughening. Boiling hard forces the meat proteins to tighten and dries the sauce.

Swap the clove

How well each one fits the dish's main ingredients (beef, flour, parsley, carrot, onion, garlic):

  1. Cuminfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against beef, flour, parsley, carrot, onion, garlic. Candidates are from the same food group and used in at least 100 recipes.
