Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the bulk of the sauce and give it a fresh, crisp texture once drained.
Vinegar
Adds acidity that brightens the sauce and balances the richness.
Rich cream
Adds richness and a light, airy texture when whipped.
Mayonnaise (in the method)
Provides fat and a smooth, creamy body that holds the sauce together.

The step that matters

Grate and drain the cucumbers. Cucumbers hold a lot of water. If they are not drained well, the excess liquid thins the sauce and dilutes its flavour and body.

Swap the cucumber

How well each one fits the dish's main ingredients (pepper, vinegar, cream):

  1. Capsicumfits better
  2. Mustardfits better
  3. Horseradishfits about as well
  4. Cucumberthe original

Fit is the average pairing score against pepper, vinegar, cream. Candidates are from the same food group and used in at least 100 recipes.
