Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Grated potato supplies the bulk and starch that bind the dumpling mass.
Eggs
Egg proteins set when cooked, helping hold the dumplings together.
Flour (in the method)
Flour absorbs moisture and helps the mixture hold its shape in water.
Cooked rice
Cooked rice adds body and a soft, tender texture to the dumplings.

The step that matters

Mixing with flour. Too little flour leaves the balls fragile and likely to break apart in the water, while too much makes them dense and heavy. Add flour gradually until the mixture just holds its shape.

Swap the potato

How well each one fits the dish's main ingredients (rice, bread, butter, egg):

  1. Asparagusfits better
  2. Leekfits about as well
  3. Potatothe original
  4. Chivefits about as well

Fit is the average pairing score against rice, bread, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
