Rhubarb Pudding

Ingredients

Directions

  1. Prepare the rhubarb as for pie, and fill the bottom of a bak- ing dish. Sprinkle with 1 cup sugar. Make a batter of 1 cup sour milk, 2 eggs, a pinch of salt, h teaspoon soda, butter size of an egg, and flour enough for a cake batter. Spread over the rhubarb and bake. When done, turn upside down, stir up the rhubarb, and serve with sugar and cream. This is a good way to make apple and fruit pies for those who do not like under crusts.
