Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Biscuit Tortoni
Ingredients
Directions
Make the custard
Boil together 1 cup sugar and 1 cup water for 10 minutes.
Stir into this the well beaten 3/4 of 4 eggs, cooking 5 minutes longer.
Add flavorings and cream
When cold, add 2 tablespoons each of sherry, maraschino, and chopped almonds, and ½ cup powdered macaroons.
Turn this over 4 quarts of whipped cream, mixing well together. One quart of thick cream before whipping will make the amount.
Freeze
Place in freezer for 4 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sugar
- Sweetens the mixture and softens the texture of the frozen dessert.
- Eggs
- Thicken the cooked syrup into a custard that gives the dessert body.
- Whipped cream
- Adds air and richness, giving the tortoni its light, creamy texture.
The step that matters
Add the flavorings only when the custard is cold. Adding sherry, nuts and macaroons to a warm custard can thin it and melt the cream. A cold base keeps the whipped cream stable so it holds its airy structure when folded in.
