Wash, core and cut the apples small; cover with water and stew till tender; rub through a sieve, and flavor with oil of cinnamon and sugar to taste. Put back in tlic kettle and boil, stirring con- stantlv, till done.

Cook \ bushel good pippins thoroughly in 1 gallon sweet fresh cider ; rub throue-h a colander ; return to the fire, add 6 pounds white sugar, cook several hours stirring constantly. \ hour before it is done add ground cinnamon, cloves and allspice to taste. Cook till quite thick; when cod pour into stone jars, and cover tight.
