Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice (in the method)
Absorbs the tomato liquid and sets into a firm, shapeable mass once cooled.
Egg
Binds the mixture and, as a coating, helps the crumbs adhere and brown when fried.
Cheese
Adds savory richness and helps bind the mixture.
Canned tomatoes
Provide the main liquid, acidity and flavor of the base.

The step that matters

Cool the mixture before shaping. A warm, soft rice mixture is too loose to hold its shape. Cooling lets the starch firm up and the egg set slightly, so the croquettes keep their form and do not fall apart in the hot oil.

Swap the clove

How well each one fits the dish's main ingredients (tomato, cheese, carrot, onion, egg):

  1. Cuminfits better
  2. Celeryfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against tomato, cheese, carrot, onion, egg. Candidates are from the same food group and used in at least 100 recipes.
