What each ingredient does

Sugar
Sweetens the fruit and, when boiled into syrup, thickens and helps preserve it.
Berries
Provide the fruit, flavor and juice that the sugar syrup soaks up and concentrates.

The step that matters

Boiling the syrup to a thread. Boiling concentrates the sugar, so the syrup thickens and helps preserve the fruit. Stop too early and the syrup stays thin; go too far and it turns hard and sticky.
