What each ingredient does

Tomato juice (in the method)
Forms the main body and flavor base of the ketchup, and thickens as it cooks down.
Vinegar
Adds acidity that sharpens the flavor and helps preserve the ketchup.
Sugar (in the method)
Adds sweetness that balances the acidity and savory tomato flavor.
Bay leaves
Contribute a subtle aromatic, herbal background note during simmering.
Allspice
Adds warm, aromatic spice notes to the sauce.
Cloves (in the method)
Add a strong, warm aroma that deepens the spiced flavor.

The step that matters

Cook the juice until thick. Simmering evaporates water and concentrates the tomato solids and sugars, which thickens the sauce and deepens its flavor. Stirring helps prevent scorching on the bottom of the pan.
