Ingredients

Directions

Prepare

  1. Prepare a sheetiron dripping pan, clean it and place it over the gas to heat.

  2. Light the oven to full heat.

  3. Tie the roast firmly and smooth its ends.

Sear and bake

  1. When the pan is blue hot, set one raw end of the roast on the blue spot and sear it.

  2. Turn the roast and sear the other raw end, and any raw strip along its length that is not covered with fat.

  3. When all sides are seared, put the roast in the pan and immediately place it in the hot oven.

  4. Let it cook for a few moments, then reduce the heat just enough so it does not burn while keeping the oven hot enough to keep juices from escaping.

  5. Turn the roast occasionally and bake 15 or 20 minutes per pound, depending on whether you prefer it rare or well-done.

Serve

  1. Serve the roast on a hot platter, garnish, and present it as is.

  2. Use no salt, pepper, butter, flour, or water.

  3. If you wish to pare potatoes and brown them in the pan, add a little shortening to turn the potatoes in.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rump roast beef
Forms the main body of the dish, cooked by searing and then slow oven baking.
Fat salt pork
Adds fat that can cover raw surfaces of the roast during cooking.
Suet
Adds fat that can cover raw surfaces of the roast during cooking.

The step that matters

Searing the raw ends on the hot pan. Searing quickly browns the surface and seals in juices, so the roast keeps its moisture. Cutting the heat too early or searing too little leaves raw areas and lets juices escape during baking.

Swap the onion

How well each one fits the dish's main ingredients (cinnamon, beef, pork, tomato, vinegar, flour, clove):

  1. Capsicumfits better
  2. Okrafits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against cinnamon, beef, pork, tomato, vinegar, flour, clove. Candidates are from the same food group and used in at least 100 recipes.
