Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the dish and becomes tender when boiled.
Milk
Forms the base of the sauce that coats the cauliflower.
Flour
Thickens the milk into a smooth sauce.
Butter
Adds richness and flavor to the sauce.

The step that matters

Thickening the milk sauce. Flour must be stirred smooth in a little cold milk before it goes into the hot milk; otherwise it clumps and the sauce turns lumpy instead of silky.
