What each ingredient does

Strawberries (in the method)
Supply the fruit, flavor, and juice that the sugar draws out to form the syrup.
Sugar
Draws water out of the fruit, sweetens it, and helps preserve it by thickening the syrup.

The step that matters

Boil for twenty minutes after skimming, without mashing. Prolonged boiling darkens the sugar and fruit and softens the berries. Stirring or mashing breaks their structure, so the fruit turns mushy instead of staying whole in a clear syrup.
