Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in the liquid and thickens the pudding as it cooks.
Eggs
Egg yolks set the custard, and the whipped whites add lightness.
Milk
Forms the liquid base that the tapioca thickens and the eggs set.
Sugar
Adds sweetness and helps the top brown in the oven.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Baking the mixture. Baking must be long enough for the egg yolks to set the custard and the tapioca to cook fully. Underbaking leaves it runny, while overbaking can make the eggs curdle and turn grainy.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
