Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a smooth, creamy texture when creamed with sugar.
Sugar
Sweetens the dressing and helps the butter whip up light when creamed.
Egg
Adds body and thickens the mixture as it gently heats.
Lemon
Provides acidity and bright citrus aroma.

The step that matters

Heat very hot but do not boil. Egg proteins set and can curdle or scramble if the mixture gets too hot. Gentle, constant stirring over the kettle lets it thicken smoothly.
