Pound very thoroughly a slice of steak cut % inch thick from the round, (1% pounds) ; sprinkle with flour and pound again: keep adding flour and working it into the steak (both sides) until 1 cup of flour has been used ; put into a very hot iron pan and sear well (m both sides; season with salt and pepper cover with boiling water; let simmer gently for one hour; slip a knife under it frequently to prevent burning.
