Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Creamed Beef
Ingredients
Directions
Prepare the sliced beef
Slice 1 pound of beef into thin slices.
Put 3 tablespoons of butter into a frying pan, and as soon as it is melted add the meat.
Stir until the slices begin to curl.
Add 1 cup of milk.
When the milk boils, stir in 1 teaspoonful of flour mixed smooth with 3 tablespoons of milk.
Season with pepper.
Boil up once and serve.
Make and bake the beef roll
Mix 1 pound uncooked beef, chopped fine, yolk of 1 egg, 1 tablespoon chopped parsley, 1 tablespoon melted butter, 1 tablespoon bread crumbs, 1 teaspoon lemon juice, salt and pepper together.
Form into a roll about 6 inches long and 4 inches in diameter.
Wrap in greased paper.
Put in a pan and bake in a quick oven for 30 minutes.
When done, remove the paper, place the roll in the center of a hot dish and serve with mushroom or brown sauce poured over it or slice and serve cold.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef
- Forms the main body of both the creamed sauce and the baked roll.
- Milk
- Makes the liquid base of the cream sauce, thickened by the flour.
- Flour
- Thickens the milk into a smooth sauce as it heats.
- Egg yolk
- Binds the chopped beef mixture so it holds its roll shape.
- Bread crumbs
- Absorbs moisture and helps the beef roll hold together.
- Butter
- Adds richness and flavor to the beef and the roll.
The step that matters
Forming and wrapping the roll. The raw beef mixture is soft and can crack or fall apart if formed loosely. Packing it firmly and wrapping it tightly in greased paper helps it hold its shape while the egg and crumbs set during baking.
