What each ingredient does

Flour (in the method)
Forms the thick batter body that holds the pancake's shape as it cooks.
Sour milk (in the method)
Its acidity reacts with the soda to help the pancakes rise.
Eggs
Bind the batter and add structure and richness to the pancakes.
Soda
Reacts with the sour milk's acid to release gas that lifts the batter.

The step that matters

Bake immediately.. Once the soda is added, its reaction with the acid starts releasing gas. If the batter waits, that lift is lost, so the pancakes turn out flatter.
