What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the dish.
Butter
Carries the mushroom flavour and enriches the sauce with fat.
Flour (in the method)
Thickens the milk and mushroom liquor into a smooth sauce.
Milk
Forms the liquid base of the sauce, giving it a creamy body.
Eggs
Egg yolks enrich and add body to the sauce just before serving.

The step that matters

Adding the egg yolks just before serving. Egg yolks thicken when heated and can curdle or scramble if the sauce boils after they are added. Adding them last, off heat or at low heat, keeps the sauce smooth and creamy.
