Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites whip into a light, stable topping.
Flour
Starch thickens the milk mixture so the cream sets firm enough to slice.
Sugar
Adds sweetness and helps the meringue topping hold its whipped structure.
Milk (in the method)
Forms the liquid base that the flour and eggs thicken into cream.
Butter (in the method)
Adds fat for richness and a smoother mouthfeel in the filling.

The step that matters

Stir in the eggs and flour and boil. Flour starch must cook fully to thicken the filling, while egg yolks can curdle or scramble if overheated. Keep stirring constantly and keep the heat controlled so the cream thickens smoothly without lumps or graininess.
