What each ingredient does

Peaches
Provide the main fruit flavor and body of the ice cream.
Pulverized sugar
Sweetens the peaches and helps draw out their juices.
Rich cream (in the method)
Adds fat that makes the ice cream smooth and creamy.

The step that matters

Adding the peaches when nearly frozen. If the base is still liquid, the crushed peaches sink and dilute the mixture. Adding them once it is nearly frozen keeps the fruit suspended and evenly distributed through the cream.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
