What each ingredient does

Cabbage
Forms the bulk of the relish and provides crisp texture once drained.
Sugar
Adds sweetness to balance the sharpness of the vinegar.
Vinegar
Provides acidity that preserves the vegetables and gives the relish its tang.

The step that matters

Draining the salted cabbage. Salt draws water out of the cabbage through osmosis. Draining long enough removes excess liquid, so the relish stays crisp rather than watery after boiling and canning.

Swap the cabbage

How well each one fits the dish's main ingredients (sugar, pepper, mustard, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Radishfits about as well
  4. Cabbagethe original

Fit is the average pairing score against sugar, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
